It was noon and a silence only accompanied by the sound of crickets dominated the desert environment. The minimalist but impressive landscape of sandy volcanoes made this island in the middle of the Atlantic but close to the African coast so special. She had been walking along the paved road for a while without meeting anyone or anything, the absence of everything overwhelmed her. Suddenly there in the distance, a mill appears on the horizon. She knows she has to get closer, find out if at least there is a soul there apart from her…. Suddenly she wakes up on the beach lying on white sand and looking at a calm turquoise sea. She was on her favorite island Fuerteventura and luckily everything had been just a dream.

It is estimated that there are around 1,000 mills in Fuerteventura. Some 800 dedicated to extracting water and 200 to grinding cereals. Driven by the strong wind of the island, they rotated various mechanisms to move the millstone used to grind grain (mainly wheat and barley, but also chickpeas, oats and rye) which resulted in the production of gofio, one of the most valued goods of Canarian gastronomy.
